The blade of this Chef’s knife is made of Damascus clad San Mai steel. In this case, many layers of alternating steels are forge welded together under immense heat and pressure to create Damascus steel, which is then clad on either side of a piece of Apex Ultra high carbon steel, widely renowned for its edge retention and simultaneous toughness, as well as taking a beautiful colour! Created by the fantastic Tobias Hangler and colleagues in Austria, they don’t call this beautiful steel “Ultra” for nothing.

As the blade is ground, the different layers are revealed, with each distortion in the pattern illustrating a different blow of the hammer during forging.

The spine and choil are rounded for comfort in use, and the blade has been ground all the way from the edge to the spine to give a clean and lean look. The cutting edge is reasonably flat towards the heel and a generous curve to its belly, leading up to a very fine tip.

The handle is made of wind felled spalted Beech from Co. Carlow, green Atlantic Ocean plastic gathered in Farrihy Bay in Co. Clare, brass, and sterling silver. The handle is a style that I have been leaning towards recently which compliments the lines of the blade. It is curved and faceted, and swells to fill the palm of the hand nicely when held in the pinch grip.

This knife was designed and built to be used every day, and I hope you enjoy using it as much as I did making it.
